 The amount of milkfat in milk varies by the breed of cattle that produced it, along with individual variation.  Holsteins are most often used for milk production because they can produce the greatest volume of milk, but other breeds, such as Jersey, produce less milk, but with higher milk fat, often up to 6% milkfat.
