:Best obvious compromise is "2020+ Pandemic" (one side or other of the "Covid-19" key). Doesn't need continual (or at least yearly) rewriting. Not likely to be confused with MERS or ('original') SARS or any other novel popup pathogen.

:Perhaps when pandemic is officially over (or, as is likely, declared officially now endemic), it can be rewritten to (or added with) the true range, as was the 1914-1918 Great War, eventually - although that's also a bad example (in various ways) in some countries, I know.

:Maybe doesn't matter until "SARS-COV-3, a.k.a. Covid-27" arrives, or whatever other thing ''next'' surprises us. Or when a decade or so has passed and (with Randall still hopefully doing funny comics about how his new hoverboard/jetpack/matter-transporter just doesn't live up to its original promise) the explainxkcd audience is starting to get people who don't realise (and can't remember) that it was ''discovered'' (give or take conspiracy theories!) near the end of 2019 but only became officially pandemical in '20, hence the discrepancy.
